Cilantro Garlic Scape Citrus Dressing
Toss this on almost any salad and enjoy. A favorite way to serve this is to lightly toss your lettuce in the dressing and then top with an chicken salad and other thinly sliced vegetables.
This recipe is easily altered depending on the herbs you have. Cilantro pairs well will the lime but you can also use lemon. Or skip the lime and cilantro and do a parsley and lemon combination. Choice is yours!

3/4 cup olive oil
4 tbs lime juice
1 tsp honey
1 tbs minced garlic scape (or more if you want more garlic flavor)
2 heaping tbs of minced cilantro
salt and pepper to taste
optional: add a tbs of lime zest for more lime flavor.
If you want to skip the chop & dice throw everything in a blender. Or mince the scape and cilantro, and then whisk into the oil, honey and lime until blended. Taste and adjust to taste. Store in a sealed jar in the refrigerator that you can shake vigorously before use.
